MB Article - Georgia Cooking - Cranberry Cream Cheese Bread

Ms. Sturgeon noted this is one of her favorite holiday recipes.  It freezes well and can be made without the cream cheese layer.  This recipe provides a great way to use and enjoy Georgia pecans during the holiday season.

2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup shortening
3/4 cup orange juice
1 egg
1 Tablespoon grated orange rind
1/2 cup chopped Georgia pecans
1 cup chopped cranberries

Filling:

1 (8-oz.) package cream cheese, softened
1/2 cup sugar
1 Tablespoon all-purpose flour
1 egg

Sift together flour, sugar, baking powder, baking soda, and salt. Set aside.

Cream shortening; add orange juice, 1 egg and orange rind. Gradually add dry ingredients. Fold in nuts and cranberries. Place 1/2 the batter in a greased 9-inch loaf pan.

Prepare filling: Cream softened cream cheese. Add remaining ingredients; beat until smooth. Spread filling over batter. Top with remaining batter. Bake at 350 degrees for 1 hour.
