MB Article - Georgia Cooking - Extra Good Turnip Greens
2 bunches turnip greens with turnips, if available
1 pound small turnips (if greens with turnips are not available)
1/2 pound ham scraps
2 cups chicken stock
Salt and black pepper
1/4 cup cider vinegar
3 tablespoons sugar
Hot pepper sauce, optional
Wash the greens well in three changes of cold water; shake them good, then wash them one more time. Peel and quarter the turnips. Bring chicken stock to a boil and add the turnips and ham scraps. Cook for 10 minutes; add the greens. Lower to simmer, cover and cook for 30 minutes. Season with vinegar, sugar, salt and pepper. Add pepper sauce, if desired.

Testing Note: Fresh turnip greens were not available, so for testing purposes a 1-pound package of frozen mixed greens was used and ham hock instead of ham scraps.
