This recipes provides a great way to use fresh Georgia apples, which are in season beginning this month and continuing into the fall through December.  When purchasing apples, be sure to ask for those that are “Georgia Grown.”

Apple Dumplings

There are 2 versions to this recipe. Choose the one that fits your skill level and that you
have time to prepare.

6 small fresh Georgia apples, peeled and cored (4 medium apples can be used)
2 cups sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups water
1/4 cup butter or margarine
3/4 cup shortening
2 cups all-purpose flour
1 teaspoon salt
2 Tablespoons baking powder
1/2 cup milk
1/2 cup sugar
1 teaspoon ground cinnamon
1/4 cup butter or margarine
Vanilla ice cream

Make sauce by combining 2 cups sugar, 1/4 teaspoon cinnamon and 1/4 teaspoon nutmeg and water in a large saucepan. Bring to a boil over medium heat. Cook for 5 minutes. Remove from heat and add butter. Set aside while you prepare the apples and dumplings.

Make dumplings by sifting flour, salt and baking powder into a large bowl. Cut in shortening with pastry blender or two knives until mixture resembles cornmeal.

Stir in milk. Turn onto a floured board. Roll to 1/4 inch thickness and cut into 6x5-inch squares.

Assemble apple dumplings by placing an apple on each square. In a small bowl combine 1/2 cup sugar and 1 teaspoon ground cinnamon. Fill cavity of each apple with a spoonful of sugar/cinnamon mixture and dot with butter. Fold dough over apple. Pinch top together and place in a 13x9-inch pan with folded top up.

Pour sauce over dumplings. Bake at 375 degrees for 35 minutes. To serve spoon sauce over dumplings and top with ice cream.

Alternate version: Substitute large size canned biscuits for dumplings. Follow the steps for assembling and baking.

Testing notes from the home economist: Both versions were tested. Pillsbury Grands – Extra Rich were used for canned biscuits.  The homemade dumplings were harder to work with, but they tasted wonderful. Both versions were good. Don’t worry if they aren’t beautiful; the taste will make up for it!! They may look a bit like baseballs going into the oven, but one taste and you will not care how they looked.

While you can use 4 medium apples, the taste is so rich that eating one large one might be more than most folks can handle. Small apples yielded a large finished product.
