MB Article - Georgia Cooking - Quick and Easy Red Beans and Rice

2 (15-ounce) can red kidney beans
1 medium onion, chopped
2 Tablespoons butter
Salt and pepper to taste
1/8 teaspoon Tabasco
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1 Tablespoon all-purpose flour
Smoked sausage
Hot cooked rice

Drain liquid from beans into a large saucepan. Add butter, onion, and 1/4 cup water to liquid. Add seasonings. Cook over medium heat until onions are tender.  Add flour and mix well. Add beans and 1/2 cup water. Mix well. Cook over low heat for 30 minutes. Crush about 1/2 cup beans to make a thick sauce. If desired, add slices of smoked sausage. Serve over hot cooked rice.

Testing Notes: Our home economist suggests using Instant Blending Flour; the all-purpose flour tended to lump in the mixture at first, but eventually dissolved.
