4 boneless skinless chicken breasts
Salt and pepper to taste
1 Tablespoon vegetable oil
1 (10 3/4 oz.) can Cream of Broccoli soup
1/4 cup milk
Juice of 1 lemon
2 cups hot cooked rice
Season chicken breasts with salt and pepper. Heat oil in a large skillet, add chicken and cook 3 to 4 minutes, browning on each side.
Combine soup, milk, and lemon juice. Pour over chicken, heat to boil. Cover, reduce heat and cook for 15 to 20 minutes or until chicken juices run clear when pierced with a fork.
Serve chicken and sauce over rice.
