Seasonal Fruit Clafouti

This basic recipe can be made with just about any fresh fruit. Since there are a number of pick-your-own-produce operations that have fruit crops this summer, stop by one of these farms to pick fresh blueberries, blackberries, peaches, strawberries, or other in-season fruits. Regardless of the fruits you try in the recipe, be sure to use those that are Georgia-Grown.

11/4 cup milk

1/4 cup cream

4 eggs

1 teaspoon vanilla extract

11/4 cup all-purpose flour

1/4 cup sugar

2-3 cups sliced fruit or berries

Preheat oven to 375 degrees.

Combine milk, cream, eggs, vanilla, flour, and sugar in blender (or food processor) container.  Blend until smooth and creamy. Pour 1 cup of mixture in a greased 9-inch deep dish pie plate or quiche dish.  Bake for 10 minutes.

Spread fruit over baked layer. Pour remaining batter over fruit. Reduce oven temperature to 350 degrees and bake for 45 minutes.  Test for doneness by inserting a knife into center of dish. If it comes out clean, the mixture is done.

Serve warm or cold sprinkled with cinnamon sugar and topped with a dollop of sour cream. Yield: 1 (9-inch) pie.
