Savory Vidalia ® Onion Pie
Served warm with sliced tomatoes right from the garden, this recipe using Georgia’s famous Vidalia ® onions makes a complete summer meal.
3 medium Vidalia ® onions, quartered and sliced
1/2 cup butter
3 eggs, slightly beaten
1 cup sour cream
1/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground red pepper
1 (9-inch) unbaked pie crust
Preheat oven to 450 degrees.
Sauté onions in butter in large frying pan until onions are slightly soft. Combine remaining ingredients in a large mixing bowl. Place onions in pie crust. Pour filling over onions. Bake for 15 minutes at 450 degrees, then turn oven down to 325 degrees and bake for 15 minutes or until filling is slightly brown and set. Serve warm. Yield: 4 to 6 servings.

Testing note: The egg mixture forms a custard-like “topping” over the onions. If you desire a more quiche-like texture, combine all of the ingredients before pouring into the unbaked crust. Try adding your favorite chopped fresh herbs to the mixture –basil, sage, thyme etc.
