Wilted Greens Salad

According to Mr. Delepenia, this is a very old recipe. In the spring, his grandmother   used to go out and pick wild greens (dandelion, poke salad, etc). She always said this was a good tonic to wake up your system after a cold, hard winter.

2 eggs, hard cooked

6 slices bacon

1/2 cup cider vinegar

1/4 cup sugar

Pepper to taste

2 quarts mixed greens (Bibb, butter or iceberg lettuce, spinach, romaine or any combination of young, tender greens)

Peel and dice hard cooked eggs. Set aside.

Cook bacon until crisp. Drain, crumble bacon and set aside.  Add vinegar, sugar and pepper to drippings in pan. Simmer to dissolve sugar.

Place torn salad greens in large bowl; pour hot dressing over greens. Top with egg and bacon; toss to combine. Serve immediately. Yield: 2 to 4 servings.
