Apple Slaw
3 Tablespoons olive oil
2 Tablespoons mayonnaise
1 Tablespoon mustard
1 Tablespoon lemon juice
1/4 teaspoon hot sauce
1 (16-ounce) package shredded slaw mix with carrots and red cabbage
1 large apple, peeled and finely chopped
Salt and black pepper to taste
Combine oil, mayonnaise, mustard, lemon juice and hot sauce in a large bowl. Stir to combine. Add slaw mix and apple, tossing well to coat. Add salt and pepper to taste. Chill before serving.

Testing note: Cooked, crumbled bacon makes a nice addition to this recipe. Use tart apple for increased taste.
Calico Bean Casserole
6 slices bacon, cooked and crumbled, reserve bacon drippings
1 cup chopped onion
1 (16-ounce) can pork and beans
1 (16-ounce) can kidney beans, drained
1 (16-ounce) can lima beans, drained
1 pound ground beef, browned and drained
1/2 cup catsup
1/2 cup firmly packed brown sugar
1 teaspoon dry mustard
2 teaspoons cider vinegar
Sauté onion in reserved bacon drippings. Combine onion and remaining ingredients in 2-quart baking dish. Bake at 350 degrees for 45 minutes. Yield: 8 servings.
