Apple Enchilada Dessert
1 (21-ounce) can apple pie filling, chop the apples
6 (8-inch) flour tortillas
1 teaspoon ground cinnamon
1/3 cup margarine or butter
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1/2 cup water
Preheat oven to 350 degrees. Spoon pie filling evenly over tortillas. Sprinkle with cinnamon. Roll tortillas and place seam side down in lightly greased 8-inch baking pan.
Combine margarine, the sugars and water in a medium saucepan; bring to a boil over medium heat. Reduce heat and simmer, stirring constantly for 3 minutes. Pour sauce evenly over tortillas; sprinkle with additional cinnamon, if desired. Bake for 20 minutes. Yield: 6 large servings.
