Spicy Grilled Chicken Breast with Corn Relish

Spicy Grilled Chicken Breast with Corn Relish

1 tablespoon light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon paprika
1/8 teaspoon ground red pepper
1/8 teaspoon ground black pepper
1 teaspoon chili powder
1/2 teaspoon ground cumin
4 skinless, boneless chicken breast halves, pounded to 1/4 –inch thick

Combine spices in a small bowl. Rub over both sides of pounded chicken breasts.
Grill over hot fire for 3 minutes on each side. Serve with Corn Relish.
Yield: 4 servings.

Corn Relish

2 (11-ounce) cans whole kernel sweet corn, drained
1 cup diced red bell pepper
3 tablespoons chopped onion
2 tablespoons chopped cilantro
2 tablespoons lime juice
¼ teaspoon ground black pepper

Combine all ingredients in medium bowl. Serve with Spicy Grilled Chicken Breasts.
Yield: 2 cups.
